Vegan Eggnog Waffles

Here we go again with some delicious Vegan waffles. This time around I took my regular Vegan Waffle recipe and turned it into Vegan Eggnog Waffles for all my eggnog enthusiasts. I myself look forward to eggnog everything. I love eggnog shakes, lattes, ice cream, and all the other goodies.

Easy Eggnog Everything

It’s easy to substitute anything you would normally make with milk with eggnog. As long as the flavors will go together, give it a shot and I’m sure it’ll be a hit. I simply substituted the almond milk that I use for my Vegan Waffle recipe with eggnog made from a non dairy milk and voila! You’ve got yourself some delicious Vegan Eggnog Waffles for breakfast. Add a little butter and maple syrup to the mix and you are about to have yourself your new favorite breakfast. Just like the other waffle recipe, these can be made in larger batches and stored in the freezer or fridge depending on how quickly you plan to use them.

Although I do love regular eggnog, there are some great alternatives if you’re looking for a lighter option. Silk has their seasonal Silk Nog which is 80 calories for a half cup, non dairy, and made of Soy. Califia Farms also came out with a delicious almond milk based Holiday Nog that comes in at 50 calories for a half cup. Both are delicious but still not as rich or creamy as regular eggnog.

In case you haven’t noticed, I absolutely love my DASH mini waffle maker. The kids are loving it to because I seem to be making waffles every other day since it’s so convenient. For the price, it was honestly a steal. I also ended up buying the DASH Express Electric Griddle which I’ve used to make eggs, grill burgers, reheat meat, and a ton of other things. I really like their products, especially because they are non-stick and easy to clean.

Ingredients

1 1/4 cup flour

1/2 cup unsweetened apple sauce

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 tsp cinnamon or pumpkin pie spice

2 tbsp SF pancake syrup

1 tbsp apple cider vinegar

1/2 cup Silk Nog (or eggnog of choice)

Instructions

  1. Preheat mini waffle maker (or regular sized waffle maker) 
  2. Add all ingredients into bowl and mix together until smooth with no clumps
  3. Spoon batter into preheated waffle maker and cook until slightly brown and crispy on the outside. 
  4. Serve warm with butter, syrup, whipped cream, or toppings of choice.

Notes

These mini waffles can be stored for later use in a ziplock bag in the freezer or refrigerator.

    These sound so good! I can get down with pumpkin spice, but if I’m honest, I’m more like #EggnogEverything 😋
    P.S. How is that waffle maker only $9.99?! It is a steal! Is it easy to clean? I never use mine because I hate washing it. It’s the full size 4 square waffle type and the iron part don’t come out to be able to clean it 🙄

      I have a regular size waffle maker but the small one is just easier to use. Super easy to clean and even though it says non-stick I usually spray it with cooking spray anyway. I ordered it on Amazon and it came right to my doorstep!I love it and so do my kids because they love waffles! Haha!
