The BEST Pickled Tuna Salad

Creamy, crunchy, and refreshing! The BEST pickled tuna salad is perfect for sandwiches, crackers, rice cakes, or all on its own.

Ingredients

1 16 oz can of tuna

1/2 celery stalk, chopped

6 cornichons, chopped

1/8th small red onion, chopped

2 tbsp mayonnaise

2 tbsp pickle juice from cornichon jar

1 tsp mustard

salt & pepper (optional)

Instructions

  1. In a medium size bowl, add all of your ingredients and mix together until everything is well incorporated. 
  2. Enjoy on your favorite bread, crackers, rice cakes or cover and chill until ready to serve.

Notes

You can also sub some of the mayonnaise for greek yogurt to make it higher in protein. I like the taste and color that the red onions give this recipe but those can be omitted or subbed for white onions depending on your preference.
