Hearty and Healthy Spinach and Sun-Dried Tomato Meatballs bursting with flavor and ready to be stuffed into a roll or put on your favorite pasta!
1 lb package Jennie-O 93/7 ground turkey
1/2 cup mushrooms, finely chopped
2 cups fresh spinach, coarsely chopped
1 tbsp minced garlic
1 small onion, finely chopped
1 tbsp Italian seasonings of choice (I used a combination of dried basil, thyme, rosemary, and oregano)
Salt and Pepper to taste
You can use any ground meat that you prefer but it may alter the calories. Also, any of the Bolthouse Dressing go great and add a ton of flavor so use whichever one you’d like or any low calorie dressing of choice.
I like using the Trader Joe’s California Sun-Dried Tomatoes because they are not in oil which drops the calories as well. You can use any sun-dried tomatoes you’d like.
Lastly, I have also made these in the air fryer and they come out fantastic as well.
