2 cups fresh spinach, coarsely chopped

2 tbsp Trader Joe’s California Sun-Dried Tomatoes

Salt and Pepper to taste

Instructions

  1. In a medium bowl, add all your ingredients and mix until they are all well incorporated
  2. Scoop out small to medium sized meatballs using a cookie dough scoop or form mixture into golf ball sized balls using your hands
  3. Place meatballs onto prepared baking sheet or silicone baking mat
  4. Bake meatballs at 400 for about 25-30 minutes or until they are brown
  5. If air frying, set to 350 and air fry for 15 minutes turning once at the halfway mark

Notes

You can use any ground meat that you prefer but it may alter the calories. Also, any of the Bolthouse Dressing go great and add a ton of flavor so use whichever one you’d like or any low calorie dressing of choice.

I like using the Trader Joe’s California Sun-Dried Tomatoes because they are not in oil which drops the calories as well. You can use any sun-dried tomatoes you’d like.

Lastly, I have also made these in the air fryer and they come out fantastic as well.
