Most mornings I’m busy running around and trying to get everyone out the door on time. That usually means I’m the last one out the door and that I’m usually running behind. This breakfast takes just a short amount of time, is healthy, and can really be customized any way you’d like. So add all your favorite things to this Simple Breakfast Pizza and enjoy a hearty and healthy breakfast!
Remember, this Simple Breakfast Pizza can be customized so use whatever ingredients you have on hand. This recipe is just the base of the pizza and depending what I’ve got in the fridge, how hungry I am, or just what food mood I’m in, my toppings will change.
How to Make the Base of your Simple Breakfast Pizza
Heat your skillet on medium heat and spray it with any non-stick cooking spray you’ve got. Once the skillet is hot, add a serving of shredded cabbage. I like the cabbage that is cut a little bit thicker so that it doesn’t wilt as much. Trader Joe’s and Ralph’s have a couple great options.
While I let this heat up a little I get my eggs or whites ready. For this particular recipe I used Kirkland Egg Whites. The key to getting this Easy Breakfast Pizza to fluff up is to really give your egg whites a good shake before pouring into the pan. Once the cabbage is slightly cooked, add your egg whites (or eggs) to the pan and sprinkle seasoning of your choice.
Place a lid on top and let the eggs cook through on top and the bottom is slightly browned. This usually takes between 4-5 minutes. While this is cooking get all of your toppings ready to add to your breakfast pizza.
Once everything is cooked thoroughly, reduce the heat to low and flip to the other side. Quickly add your cheese and other toppings and place the lid back on top.
Let the cheese melt and the additional toppings get warm. At this point I like to add some pizza type of seasonings as well like oregano, rosemary, and onion powder. Once everything is heated through, plate the breakfast pizza and enjoy your Easy Breakfast Pizza!Print

150 g liquid egg whites
85 g shredded cabbage with carrots (any thicker cut coleslaw blend works great)
1 servings low fat shredded cheese
seasonings of choice
toppings such as turkey pepperoni, bell peppers, onions, mushrooms, etc.
- Heat frying pan on medium heat and spray with cooking spray.
- Once surface is hot, add coleslaw blend and saute for approximately 2 minutes. Cook longer if you like your veggies more well done.
- Spray pan again and add you egg whites, season to your liking and cover with lid. Cook egg whites approximately 4-5 minutes or until done.
- When the egg whites are cooked through, reduce the heat to low, flip egg whites to the other side and add your cheese and toppings. Cover once again.
- Once the cheese and toppings are done, remove from heat and enjoy.
