Here I go again! Raving about my air fryer because it has literally been one of the best investments I have ever made. Between the air fryer and my KitchenAid mixer, I am a happy camper. I have been making these simple air fried lemon pepper carrots and they are just perfect each time. My mouth is literally watering as I write this post! They’re so easy, delicious, and a perfect addition to any meal!
Game Day Side
Since football season is pretty much in full swing right now, I have a Sunday Funday party to attend almost every weekend. As much as I love going to these parties it’s very rare that there are healthy foods there. It’s the usual BBQ meats, cheese, chips, crackers, dips, and other variety of snacks. I usually try to bring some type of healthy snack to these parties so that I have at least one option that I can feel good about. When I have zero time to make anything, my go to is a veggie platter. I’ll grab a handful of veggies to go with my game day meal.
I literally have these air frying while I get ready or take care of any other last minute things I need to get done. Once they are done, I quickly toss them in a little more salt, throw them in Tupperware, and they’re ready to go. The best part is that they taste just as good cold but have that beautiful roasted look to them which makes them even more appetizing.
Healthy Snack Idea
Carrots are one of those items that I always have on hand. It’s definitely a rarity when I don’t. I use them to snack on during the day because they’re quick, filling, and I love the crunch. I eat them a number of different ways! Sometimes they’re just plain, other times I dip them in hummus, ketchup, Peppertizer, or just salt them. The other great thing about them is that they add so much flavor to everything I make. I’ve recently been “roasting” my carrots in my air fryer and this is definitely my new favorite way to enjoy them.
These store great so I like to make a huge batch that will last me at least a couple servings. Another great thing is that the kids seem to love them as well. These are an easy sell when it comes to dinner or a healthy snack. Although fresh is the best way to enjoy these, I am always excited for these leftovers. If I’m in a hurry 30-45 seconds in the microwave does the job. When I have more time I throw them back in the air fryer at 400 degrees for a couple minutes while I prep the rest of my food.Print
Simple Air Fried Lemon Pepper Carrots
Easy, nutritious, and delicious air fried lemon pepper carrots are a perfect pairing for any meal. These also make a great side dish or snack for any occasion.

1 lb carrots, peeled and sliced into 1/4 inch pieces
1 tbsp olive
1 tsp lemon pepper seasoning
1/2 tsp garlic powder
1/2 small lemon
- In a medium to large bowl, toss carrots with olive oil, lemon pepper seasoning, and garlic powder so that everything is well coated.
- Place carrots in air fryer basket. I like to line mine with either tin foil or parchment paper to make clean up a bit easier.
- Set air fryer to 360 degrees for 12-15 minutes, tossing carrots about halfway through. Poke with fork to make sure that they are to your desired tenderness. I like my carrots soft but not mushy. If you like them a little more tender, air fry for 2-3 more minutes.
- Place in serving dish and enjoy!
