Having different ways to use shredded chicken is key when it comes to meal prep or just making weeknight dinners a breeze. This shredded chicken casserole is one of my favorite meal prep/dinners because it’s so easy to throw together. Once I get it in the oven I can focus on making a couple sides. If my sides are oven friendly then I use this time to catch up on household chores that seem never ending, like laundry or dishes!
Shredded chicken is so versatile and easy it’s almost a no brainer to have it on hand for busy weeks. If you can find ways to doctor it up then you won’t ever get tired of having it.
We are usually running around like crazy in my house so having something healthy for my family to eat is crucial. Shredded Chicken Casserole
Healthy, savory, and delicious chicken casserole.

1 lb cooked chicken breast, shredded
1 1/2 cups riced veggies (cauliflower, broccoli, carrots, or a blend)
1/4th cup Frank’s Wing Sauce
1/2 small onion, diced
1 celery stalk, diced
1 tbsp seasoning of choice
1/4 fat free sour cream
- Turn oven on to 350
- Place all ingredients in large bowl and stir until all ingredients are mixed thoroughly (I used my KitchenAid)
- Place chicken and veggie mixture in a pre-lined or pre-greased baking dish
- Bake at 350 for 30 minutes
- Serve and Enjoy
