Protein Carrot Cake Bars

Ingredients

70 g Dymatize ISO 100 Gourmet Vanilla

32 g coconut flour

15 g baking Stevia

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 tsp salt

125 g finely grated carrots

111 g (1/2 cup) unsweetened apple sauce

60 mL unsweetened almond milk

1 tsp vanilla extract

230 g liquid egg whites

60 mL Walden Farms Maple Syrup

1 large egg

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a medium sized bowl add the protein powder, coconut flour, baking Stevia, baking powder, baking soda, cinnamon, nutmeg, ground ginger, and salt. Mix together until everything is well incorporated.
  3. In a large bowl add the carrots, unsweetened apple sauce, unsweetened almond milk, vanilla extract, egg whites, maple syrup, and egg. Mix until everything is well incorporated and smooth.
  4. Add your dry ingredients to the wet ingredients and mix until you have a nice, smooth batter.
  5. Pour batter into a prepared 8×8 baking dish. Bake at 350 degrees for 40-45 minutes.
  6. Remove from oven and let cool. Cut into 8 even bars and enjoy! 

Notes

You can substitute the Walden Farms Maple Syrup for the maple syrup of your choice but it will change the nutrition information.
