If you love cheeseburgers as much as I do then this Low Carb Cheeseburger Casserole is a must! It’s creamy, cheesy, packed with protein, and best of all it’s low on carbs. Pair it with your favorite sides or put it between a delicious sesame seed bun and you’re all set!
I for one love pickles so you can bet that I top mine with a few when I’m eating this casserole. Lately I’ve been on a kick with the Bread & Butter Chips from Vlasic. It may be the crunch that makes it that much tastier. Either way, mustard and pickles are a must with this casserole for me.

Low Carb Cheeseburger Casserole

1 package of 93% lean ground turkey
1 small onion (approximately 100 grams), chopped
1 tsp minced garlic
1 tsp hamburger seasoning (or to taste)
2 tbsp low sugar ketchup
2 tbsp mustard
2 tbsp fat free cream cheese
4 slices beefsteak tomato (optional)
2 oz Velveeta shreds
1 oz hamburger dill pickle chips (optional)
- Preheat your oven to 400°
- Heat your skillet on medium heat and spray with cooking spray. Add your chopped onions, ground turkey, garlic, and seasonings and brown.
- Transfer the ground turkey mixture to an 8×8 baking dish and add the ketchup, mustard, and softened cream cheese. Mix well and place sliced tomatoes over the ground turkey. Evenly sprinkle the cheese on top of the tomatoes.
- Bake at 400° for 20-25 minutes or until the cheese has melted. Remove from oven, layer hamburger dill pickles on top and serve.
This recipe can be made with your favorite hamburger toppings and served with french fries, waffle fries, in hamburger buns, or whichever way you like to eat your burgers.
Although I usually just throw sliced tomatoes on top for convenience, I think that dicing them up first will make the dish easier to eat with the waffle fries next time. It you’re going to throw this between a couple hamburger buns, then that won’t be an issue at all.
