If you grew up in a Hispanic household then you most likely had this more often than you’d like to admit. This was and still is one of my favorite things to make for breakfast, lunch, or dinner. Huevos con Salchicha AKA Eggs and hot dogs. My son loves it as well and we’ve resorted to making a larger batch so that we can have it a few days in a row for breakfast. Although sometimes it doesn’t even make it to the next day because we end up finishing it the same day.
Quick and Easy
Huevos con Salchicha is an easy breakfast that really can be made healthy depending on what ingredients you use. I like to buy the chicken hot dogs from Trader Joe’s because they are low in fat, sodium, and carbs. They are also one of my favorite tasting hot dogs. Just like any other dish, it can be as healthy or unhealthy as you want it to be. For this version, we are going with a healthier one.
When making this dish, one of the key things is to chop up the hot dogs and brown the edges of them so they are slightly crispy. While doing this I also add the onion and caramelize it along with the hot dogs. Once everything is almost cooked, I add the tomato and leave it for a minute or so before adding the main ingredient which is the eggs. Depending on how much I am making and how I’ll be serving it, I will either do it on the stove top or bake it in a casserole dish.
We like to add cheese when everything is almost done cooking through and letting it melt through. Once all the eggs are cooked, serve and enjoy!Print
Huevos con Salchicha
This was a signature dish at my house when I was growing up. Like most hispanic families, Huevos con Salchicha was a favorite for us.

4 Trader Joe’s uncured chicken hot dogs, cut into pieces
8 eggs, scrambled
1 small tomato, diced
1/2 small onion, diced
1/2 tsp garlic, minced
1/4 cup almond milk
salt and pepper to taste
*Cheese and any additional toppings you’d like
- Heat skillet or pan on medium heat and spray with cooking spray
- Add your hot dog and diced onions to skillet and let brown
- While your onions and hot dogs are browning, whisk, the eggs and almond milk together
- Once the onions and hot dogs are ready, add the tomato and minced garlic
- Let cook for additional minute or two and spray the pan with cooking spray again
- Add your egg mixture and cover. Let the eggs cook through. Add salt, pepper, and any additional seasoning of your liking. Add cheese and cover so the cheese will melt through.
This is the basic dish but you can add or subtract ingredients to your liking. It can also be made in a casserole dish and baked in the oven. I like to saute the hot dogs and onions before putting it in the casserole dish to give the dish some added flavor from caramelizing the onions with the hot dogs. You can also double or triple the amount depending on how much you’d like to make. My ratio is usually 1 hot dog for every two eggs but this can be done to your liking as well. This recipe can also be made with egg whites.
