Eggnog and Cheesecake…need I say more? Seriously though, two of my favorite holiday treats all rolled into one! Not only was this recipe super easy to make but it was an absolute hit this past weekend. Not only that but it’s got less than a third of the calories that a regular slice of cheesecake has. This is the crust less version but with so much flavor in this recipe, I promise you won’t even miss it! This Healthy Eggnog Cheesecake has one third the fat, one half the carbs, and double the protein of a regular slice of cheesecake.
Low Calorie Eggnog
Every year around this time I look for lower calorie versions of eggnog but am usually disappointed because although they’re good they really don’t compare to the real, full fat version. They’re always on the watery side and just don’t do eggnog any justice. Well, this year that all changed because Califia Farms came out with a Holiday Nog that is AMAZING!! It’s rich, creamy, and tastes ALMOST like true eggnog. I am sooooo happy!
I love, love, love cheesecake! I love most of the variations of it, especially specialty flavors like this. I decided I was going to make a holiday cheesecake for a Christmas Party that was Potluck style. I figured I could get some honest opinions on the taste and texture of it. Thankfully all the feedback was positive and everyone loved it. The eggnog wasn’t too overpowering and the texture was creamy but not too heavy. I’m excited to make this again and try other flavors using Califia Farms products. So far I have really liked every product I’ve tried of theirs. Healthy Eggnog Cheesecake
Creamy cheesecake with a hint of eggnog flavor. It’s sure to be a holiday favorite!

2 8 oz blocks of Fat Free Cream Cheese, softened
1 cup Califia Farms Holiday Nog (or eggnog of choice), room temperature
20 grams of Stevia Baking Blend
1 box White Chocolate Jell-O SF/FF Instant Pudding (1 oz)
4 large eggs, room temp
1 tbsp cinnamon
1/2 tbsp nutmeg
1/2 tsp salt
- Preheat oven to 350
- Put all your ingredients into a bowl and mix until smooth
- Pour into pie tin or springform pan and bake at 350 degrees for 45 minutes
- Allow cheesecake to cool for at least one hour and serve with whatever toppings you’d ilke
You can of course bake this in any pie crust you’d like, just follow the baking instructions for the crust. I used Califia Farms Holiday Nog but you can use your eggnog of choice. Please note that this will change the nutrition facts for this recipe.
