Eggs with Peanut Butter

It’s that time again where we are doing odd combinations of peanut buttery things. Today we are trying eggs with peanut butter. Like the past Wednesdays, I like both of these things separately so I had high hopes that this would go well! This combination was actually much easier to convince the Adapted Eats Crew to try. The last two have taken a bit of convincing to say the least, especially that peanut butter and mayonnaise sandwich!

We decided that scrambled would be the best way to try this although I’ve seen a love of people do it with hard boiled eggs. As a treat to ourselves we also made some air fryer French Toast on the side. Let me tell you, this was probably one of the best ideas ever! Not only did EVERYONE love the peanut butter and eggs combination but the side of French Toast made it even more delicious. Although this has been a thing for a while, the peanut butter on eggs idea went viral when actor Scott Foley posted a video of himself enjoying this breakfast combo. Some were all for it and some were definitely not. Ahhhh, the weird world of taste buds. Different opinions from different people. 

What’s the Verdict?

We had 4 out of 4 people give this combination two thumbs up with a must do again on the side! Ever since trying this we have actually enjoyed it a few more times. We made egg and peanut butter breakfast sandwiches, eggs and peanut butter toast, and eggs and peanut butter burritos. There’s really no way to go wrong with these. They’re absolutely delicious. I’m not gonna lie, I haven’t had a hard boiled egg in ages. I think it’s just the fact that they’re more work than scrambling an egg in the morning. Throwing one on the frying pan is just so much easier that it’s usually my go to breakfast. I really should just throw a few in the instant pot and have them ready for busy mornings if I’m really trying to be efficient.
