Eggnog Kodiak Cake Muffins

Healthy eggnog kodiak cake muffins that are a perfect grab-n-go breakfast or snack. Filling, easy to make, and packed with protein and fiber!

Ingredients

3/4th cup Power Cakes

1 tbsp I Can’t Believe It’s Not Butter Light

1/4th cup Maple Grove Sugar Free Pancake Syrup

1/4th cup Stevia in the Raw Baking Blend

1 tsp salt

1 tsp baking soda

4 oz Califia Farms Holiday Nog

1/2 cup pumpkin puree

Instructions

  1. Preheat oven to 350 degrees
  2. Mix all wet ingredients in one bowl and all dry ingredients in another
  3. Mix wet ingredients with dry ingredients, mix until smooth
  4. Pour batter into prepared muffin tin
  5. Bake at 350 degrees for 15 minutes or until top of muffins are golden brown and toothpick comes out clean

Notes

You can add chocolate chips, fruit, or nuts to these muffins for added flavor. This is just a base recipe that can be used for a ton of different flavors.
