Dark Chocolate Protein Pancake Loaf

Decadent dark chocolate protein loaf that is perfect for breakfast or dessert!

Ingredients

40 g protein pancake mix (or any pancake mix)

30 g protein powder

30 g black onyx cocoa

15 g baking blend Stevia

1 tsp baking soda

1/2 tsp salt

2 large eggs

150 g liquid egg whites (or 3 large egg whites)

50 g Fage non fat Greek yogurt

50 g no sugar added apple sauce

50 mL unsweetened vanilla almond milk (can substitute for any milk)

Instructions

  1.  Pre-heat oven to 350 degrees.
  2. Mix all dry ingredients until combined.
  3. In a separate bowl, mix all wet ingredients until well combined. 
  4. Add a little of the dry ingredient mixture to the wet ingredients and mix until everything is well combined and you have a runny batter consistency. 
  5. Pour batter into a prepared 9 x 5 baking dish and bake at 350 degrees for 30 minutes. 
  6. Let cool and serve!

Notes

I like using either the Trader Joe’s, Birch Benders, or Pamcakes protein pancake mix but any pancake mix should work just fine.
