This healthy and filling breakfast could totally pass as a dessert. The tartness from the cranberries pairs deliciously with the chocolate chips, satiates that sweet tooth and is a healthy alternative.

2 cups Quaker Oats
1/2 cup liquid egg whites
1 tbsp chia seeds
1 1/2 cups almond milk (or milk of choice)
1 tbsp Madhava Better Baking Blend (or sweetener of choice)
1 cup fresh or frozen cranberries
1 tsp vanilla extract
1 tbsp chocolate chips
Preheat oven to 350
In one bowl mix oats and chia seeds, and cranberries.
Spread this mixture into an 8 x 8 baking dish or baking dish of choice
Pour almond milk, egg whites, sweetener, and vanilla extract into shaker bottle and shake until everything is well mixed. You can also just whisk together in a bowl.
Pour the liquid mixture over the oats and add your chocolate chips on top.
Bake at 350 for 40 minutes. Wait for it to cool and serve.
This is a great make ahead breakfast or meal prep idea. You may substitute any berries for the cranberries if you’d like a less tart dish. This oatmeal bake tastes great hot or cold so depending on what you’re feeling that day, you can enjoy it either way.
