Cinnamon Roasted Delicata Squash with Brussel Sprouts and Bacon

The holidays are upon us and winter squash is finally back in season! I love bringing Cinnamon Roasted Delicata Squash with Brussel Sprouts and Bacon to holiday parties because it’s an easy dish to throw together and it’s always a hit. The best part of it all is that it’s a healthy side dish that will counter all of the sweets and treats!
If you haven’t tried Delicata Squash yet then make sure you put it on your bucket list! It’s sometimes hard to find because it is a winter squash but it’s worth the wait. It can be made sweet or savory and makes your dish healthy and delicious. I love to make Cinnamon Roasted Delicata Squash with Brussel Sprouts and Bacon because it’s quick, easy, and healthy! Really, you can make this dish savory but I like the taste of the cinnamon on the squash. I’ll set out a side of maple syrup or low sugar syrup to drizzle on top and it is fantastic.
Prep for this dish is simple. First, you’ll want to cut and deseed your squash. Check out this post for more detailed instructions.
Next you’ll chop your brussel sprouts and bacon. You can make them smaller or larger depending on your preference and cooking time. If you choose to chop your veggies smaller then go ahead and adjust the bake time to a lesser amount.
I have recently started using these great baking sheet liners and they make clean up an absolute breeze. Not only that but I save on aluminum foil and don’t have to worry about anything sticking to the sheet pan. Anything that makes kitchen clean up is always a plus in my book and is always appreciated. In a large bowl, add your delicata squash, brussel sprouts, bacon, and olive oil. Mix everything thoroughly and spread out on the baking sheet. Sprinkle cinnamon and salt on top and put baking sheet into the oven.
You’ll let this bake at 400° for 30 minutes. You’ll be able to smell the delicious aroma that the cinnamon and delicata squash give off!

Cinnamon Roasted Delicata Squash with Brussel Sprouts and Bacon

Healthy holiday dish that will have everyone wanting more. Delicata squash is only available for a short time so make the best of it!

Ingredients

2 medium delicata squash (approximately 600 grams)

1 lb brussel sprouts

6 slices Columbus uncured turkey bacon

1 tablespoon olive oil

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 cup SF Maple Grove Syrup

Instructions

1. Preheat oven to 400°

2. Cut both ends of the delicata squash then cut down the center longways. Scoop the seeds out from the center and then cut into half moons.

3. Cut the stems off the brussel sprouts and then cut in half

4. Cut bacon into small pieces

5. Place the delicata squash, brussel sprouts, and bacon in a large bowl and mix thoroughly with olive oil

6. Spread the mixture on your baking sheet and sprinkle with cinnamon and salt

7. Bake at 400° for 30 minutes

8. Once ready remove, let cool for a few minutes, and put into serving dish.

9. Drizzle with syrup and serve
