Cauliflower and Carrot Mash

A healthy and delicious alternative to regular mashed potatoes. This low calorie cauliflower and carrot mash is tasty, full of nutrients, and easy to make.

Ingredients

1 lb cauliflower, cut into florets

1 lb carrots, peeled and cut into 1-inch cubes

1/2 small onion

1 tsp garlic, minced

2 tbsp I Can’t Believe It’s Not Butter Light

1 tsp dried Oregano

1 tsp dried Rosemary

1 tsp onion powder

salt and pepper to taste

Instructions

  1. Steam cauliflower, carrots, and onion in a large pot of lightly salted water until they are soft and tender.
  2. Transfer steamed vegetables to a large bowl and mash together until well mixed (I used an immersion hand blender but a food processor, blender, or hand mixer will work as well)
  3. Add the rest of your ingredients and mix well
  4. Sprinkle a little more salt on top and enjoy!

Notes

If using an instant pot, use high pressure for 6 minutes to steam your veggies. Make sure you place a cup of water underneath.

Feel free to add any additional seasonings to the mixture
