As if Carrot Cake or Donuts weren’t already delicious on their own! Putting two of my favorite things together and adding some protein and extra veggies in there for fun! You can’t go wrong with this delicious Carrot Cake Protein Donuts recipe! I always make extra so that I can share and get other peoples opinions on recipes but with these, I honestly didn’t want to share!
When I was a kid, just the thought of carrot cake made my face crinkle up. Who would want to eat that?? At least that’s what I thought, until I finally tried it and was instantly in love! All I could think was, how could this be so good and why had I been missing out for all these years! Before giving carrot cake a fair chance I had always opted for anything chocolaty. I’m usually a sucker for anything sweet but chocolate especially. So I never imagined that carrot cake would be so good. Well, I was wrong…very, very wrong.
This is my healthy spin on a delicious treat. I added zucchini as well because it adds volume, fiber, and nutrients without adding a ton of calories. It’s also great to use because it takes on whatever flavors you’re using. I love using my silicon donut pans because it’s such a breeze to take anything I bake in them out without making a huge mess or having them break apart.
These donuts took under ten minutes to put together and only 20 minutes to bake. I’m going to use them this week as part of my meal prep snacks. I might even use them for breakfast depending on how much time I have on my hands. If I’m running late or just don’t have as much time as I’d like, I’ll grab one and it will hold me over for a while.

Zucchini Carrot Cake Protein Donuts
A healthy spin on a delicious dessert. These Zucchini Carrot Cake Protein Donuts are a hit!
2 scoops Vanilla Protein Powder (I used Dymatize Whey)
20 grams coconut flour
60 grams unsweetened apple sauce
1 Dole 4 oz unsweetened pineapple tidbits, drained (single serve container)
1 tsp baking powder
1 tbsp baking stevia
140 grams egg whites
1/4th tsp salt
1 tsp cinnamon
100 grams carrots, shredded
100 grams zucchini, grated and drained
- Mix all dry ingredients in a medium bowl
- In a separate bowl mix all wet ingredients
- Combine wet and dry ingredients and mix well
- Add grated zucchini and carrots and mix until well combined
- In a prepared donut baking pan or silicone donut pan spread the batter evenly to make 6 donuts
- Bake at 350 for 30 minutes
- Let cool and enjoy!
This can be made into muffins or a loaf instead of donuts!
Simple and delicious protein frosting in just a few easy steps!
2 tbsp protein powder
1 tsp Torani SF Syrup
1 tbsp almond milk
Mix all of the ingredients together until you have an icing like consistency. You may need to add a little more almond milk depending on the protein used and consistency wanted. Adding some liquid or baking stevia will also make the frosting a little sweeter if needed.
