Broccoli Egg White Waffles

Healthy and delicious egg white waffles that are perfect for every morning!

Ingredients

3 egg whites (can substitute 2 whole eggs)

1/2 cup broccoli (or vegetable of choice), finely chopped

3-5 grams of coconut flour

1/4th teaspoon baking powder

seasoning of choice to taste

Cooking Spray

Instructions

  1. Blend egg whites, coconut flour, baking powder, and seasonings until well mixed
  2. Pre-heat mini waffle maker (or regular sized waffle maker)
  3. Once hot, add enough broccoli to cover the bottom of the waffle maker
  4. Add enough egg white mix to cover the broccoli and close the lid
  5. Remove the waffles once they are fully cooked
  6. Repeat until you’ve finished up the batter and veggies

Notes

I make these with pretty much any veggies I have available. They can even be made on the sweet side by adding a little bit of sweetener, cinnamon, or a combination of the two. Throw some fresh or frozen fruit into the mix and you’re all set!
