These broccoli egg white waffles are perfect for a quick breakfast or snack and can really be made with any veggies. You can stuff the egg whites with cauliflower, spinach, peppers, or a combination of these.

I’ve been using my Cuisinart Smart Stick Hand Blender to make this and it’s definitely on my list of favorite kitchen items that I’ve purchased. Between the Smart Stick and the Kitchen Aid, meal prep has taken me half the time that it used to. I still can’t believe how long I held out on getting on because I thought the Kitchen Aid was too expensive. Don’t get me wrong, I still think it’s expensive but well worth the money. Luckily I still got mine on sale! Woot, woot!! What can I say, I’m a bargain shopper and proud of it. I figure, I work hard for my money and the last thing I need to do is waste it when I don’t have to.

Broccoli Egg White Waffles
Healthy and delicious egg white waffles that are perfect for every morning!
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: 4 mini waffles 1x

3 egg whites (can substitute 2 whole eggs)
1/2 cup broccoli (or vegetable of choice), finely chopped
3-5 grams of coconut flour
1/4th teaspoon baking powder
seasoning of choice to taste
- Blend egg whites, coconut flour, baking powder, and seasonings until well mixed
- Pre-heat mini waffle maker (or regular sized waffle maker)
- Once hot, add enough broccoli to cover the bottom of the waffle maker
- Add enough egg white mix to cover the broccoli and close the lid
- Remove the waffles once they are fully cooked
- Repeat until you’ve finished up the batter and veggies
I make these with pretty much any veggies I have available. They can even be made on the sweet side by adding a little bit of sweetener, cinnamon, or a combination of the two. Throw some fresh or frozen fruit into the mix and you’re all set!
