Berry Cobbler Protein Pancake Bowl

Easy, delicious, protein packed pancakes in under 5 minutes!

Ingredients

20 g Trader Joe’s Protein Pancake Mix

20 g Pamcakes Protein Pancake Mix

salt to taste

¼ tsp vanilla extract

Sweet Drops to taste (I use just a small squeeze)

100 g fresh or frozen berries

100 g shredded zucchini, drained (optional)

¼ th cup water 

Instructions

  1. Mix the Trader Joe’s Protein Pancake Mix, Pamcakes Protein Pancake Mix, and salt until well incorporated. 
  2. Add water, Sweet Drops, and vanilla extract and mix again until it forms a thick batter. 
  3. Add zucchini (if using) and berries and mix again trying to coat all the berries and zucchini with pancake batter.
  4. Microwave for about 2 1/2 minutes on high, depending on your microwave.
  5. Let cool about a minute, top with your favorite syrup, more berries, or whipped cream and enjoy!

Notes

Any instant or “just add water”  pancake mix can be used in place of the protein pancake blend. I also find that almost any increments of berries or zucchini work well and add a good amount of volume to the bowl.
